Revised Rusk Recipe

Buttermilk Rusks

Ingredients
· 1,5 kg self raising flour
· 15 ml baking powder (1 tablespoon heaped)
· 500 ml sugar (2 cups)
· 3 eggs
· 500 g butter or margarine (2 cups)
· 500 ml buttermilk (2 cups)
· 45 ml lemon juice (3 tablespoons)

Directions
1. Cream eggs and sugar well together
2. Mix the buttermilk and juice in.
3. Melt the butter and mix in with the others.
4. Sift the dry ingredients.
5. Mix the dry ingredients with your hands in till a stiff dough.
6. Grease any baking dish.
7. Make medium size balls with the dough. (150 - 180).
8. Arrange them very close into the baking dish(es).
9. Bake at 180 degrees C (360 degrees F) for 60 minutes.
10. Remove and place in a dry area overnight.
11. Dip, dunk and enjoy
